Recipes with Corn

I am giving here a few recipes with corn. They are simple to make but taste great. Try your hand and enjoy.

BAKED CORN IN CAPSICUM

Ingredients:
Sweet Corn Cream Style 100 gms.
Capsicum large 6nos.
Maida 50gms.
Butter 50gms.
Milk 600mls.
Cheese grated 100gms.
Salt to taste
White Pepper Pwd. To taste
Sugar 1tspn.

Method
1- Make white sauce - heat butter add maida and fry till you get cooked smell, not allowing to brown. Add milk whisking all the time to prevent lumps.
2- Add in sweet corn and blend well. Add half the cheese, sugar and season with salt and pepper. Cook for 5 minutes.
3- Remove the top of the capsicums and scoop out the seeds and wash.
4- Fill the mixture into the capsicums, sprinkle with the grated cheese and bake at 200 deg cel. Till it browns on top. Serve hot.
CORN AND PINEAPPLE FRITTERS

Ingredients
Sweet Corn Cream Style 250gms.
Canned pineapple slices 50gms.
Eggs 2nos.
Corn flour as required
Salt To taste
White Pepper pwd. To taste
Finely Chopped Parsley 1 tspn. Optional
Oil for deep frying
Baking Powder 1/4 tspn.

Method
1- Mix sweet corn, chopped pineapples, eggs, chopped parsley and baking pwd.
2- Add enough cornflour to form a thick batter like for pakoras. Season with salt and pepper.
3- Drop small roundels in hot oil and fry like pakoras. Serve hot.

 CORN BHURJEE

Ingredients
Corn Kernels 250 gms.
Capsicum 1 large.
Onions chopped 50 gms.
Tomatoes chopped 50 gms.
Ginger chopped small peice.
Green chillies chopped 2 nos.
Green Coriander leaves For Garnish.
Chillie Pwd. As per taste.
Turmeric Pwd. 1/2 tspn.
Garam Masala Pwd. 1/2 tspn.
Salt to taste.
Lemon 1/2 no.

Method
1- Boil Corn in salted water till tender.
2- Remove the top and seeds and chop the capsicum.
3- In a pan heat oil and fry onions till golden brown.
Add chopped tomatoes , green chillies and ginger and cook till dry. Add chillie pwd., turmeric pwd. And garam masala and fry for 3 mins.
4- Add corn and capsicum and fry for further 5 minutes. Season with salt. Squeeze the juice of lemon. Serve garnished with coriander leaves.

 FIERY CORN PIZZA

Ingredients:
Sweet Corn Cream Style 250gms.
Chopped onions 100gms.
Finely Chopped Garlic 10gms.
Tomato Ketchup 4tablespoons.
Chillie sauce 2 tablespoons.
Grated Cheese 100gms.
Bean Sprouts 30 gms.
Salt to taste.
White Pepper Powder to taste.
Pizza Base 4 nos.
Oil 30 gms.

Method
1- In a pan fry chopped onions in oil. As they start browning add garlic and fry till golden brown.
2- Add tomato ketchup , chillie sauce, sweet corn and cook for a while, season with salt and pepper add bean sprouts. You may adjust the quantities of sauces to your taste.
3- Spread this on the pizza base, sprinkle cheese and cook in an oven at 200 deg. C till crisp and brown on top. Serve hot.
LING AND MING SOUP

Ingredients
Sweet Corn Cream Style 250 gms.
Water or Stock 400 mls.
Corn flour 20 gms.
Tomato Ketchup 4 table spoons.
Chilly Sauce 2 table spoons.
Garlic Chopped 4 cloves.
Egg 1 no. Optional.
Salt To taste.
White Pepper Pwd. To taste.
Ajino-moto 1/2 tspn.

Method
1- In a pan heat oil, fry garlic slightly add ketchup and chillie sauce mix cook for a minute and keep aside.
2- In another pan put sweet corn and stock and let it come to a boil. Dissolve corn flour in a little water and add stirring all the time to avoid lumps and let it thicken. Add beaten egg and stir till the egg gets firm. Season with salt, pepper and ajino-moto.
3- Remove half of the soup and add to the sauce we made earlier.
4- To serve pour both these soups simultaneously into one cup so that in your cup half the soup is red and half white.
